Chicken Ranch Macaroni and Cheese

Ingredients:

2 cups macaroni, uncooked
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
1 packet ranch dressing mix
2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 cups cooked chicken, shredded
Salt and pepper to taste
Optional: breadcrumbs and parsley for topping

Directions:

Cook the macaroni according to package instructions until al dente. Drain and set aside.
In a large saucepan, melt the butter over medium heat. Stir in the flour to create a roux, cooking for about 1 minute until it’s golden and bubbly.
Gradually whisk in the milk, ensuring there are no lumps. Continue to cook and stir until the sauce thickens.
Stir in the ranch dressing mix, then add the shredded cheddar and Parmesan cheese. Keep stirring until the cheese is completely melted and the sauce is smooth.

Add the cooked macaroni to the saucepan, stirring until the pasta is well coated with the cheese sauce.

Bake in a preheated 350°F (175°C) oven for 20-25 minutes, or until bubbly and golden on top.
