  • 3 tablespoons extra virgin olive oil

  • 1 teaspoon crushed red pepper flakes (optional)

  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley, chopped for garnish

  • If you’re using dried butter beans, soak them overnight in plenty of water. This softens the beans so they cook evenly. The next day, drain and rinse them.
  • In a large pot, cover the soaked beans with fresh water, bring to a boil, then reduce to a simmer. Cook for about 45 minutes to 1 hour until tender but not falling apart. If using canned beans, skip this step but rinse the beans thoroughly.
  • Warm the olive oil in a deep skillet or shallow pot over medium heat. Add the minced garlic and sauté for about 1-2 minutes, until fragrant but not browned.
  • Stir in the chopped sun-dried tomatoes and crushed red pepper flakes. Let them cook together for 3-4 minutes, allowing the tomatoes to soften and the oil to capture their flavor.
  • Toss in the chopped rosemary and thyme, stirring for another minute. Pour in the broth to deglaze any bits sticking to the bottom. Let it simmer gently for 2-3 minutes.
  • Drain any excess water from the beans and add them to the skillet. Stir everything together, coating the beans in the tomato-herb mixture. Season with salt and pepper to taste. Let it simmer for another 10 minutes so the flavors mingle.
  • Taste again and adjust seasoning. Sprinkle with chopped fresh parsley and a generous grating of Parmesan cheese just before serving.
