  • 1/4 cup whole milk (warmed)
  • 3 tablespoons unsalted butter

  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup cooked bacon pieces, chopped
  • 2 green onions, thinly sliced
  • 1/4 cup sour cream or Greek yogurt
  • Optional: 1/2 cup cooked broccoli florets, finely chopped
  • Instructions

  • Preheat your oven to 400°F (200°C). Grease a muffin tin or line it with silicone liners to prevent sticking.
  • Boil the diced potatoes in salted water until fork-tender, about 15 minutes. Drain well and return to the pot.
  • Mash the potatoes while still hot. Add butter and warm milk gradually to reach creamy consistency. Season with salt and pepper. Don't overmix to maintain a fluffy texture.
  • In a bowl, mix together half of the shredded cheese, chopped bacon, green onions, sour cream, and optional broccoli to make the filling.
  • Spoon about 2 tablespoons of mashed potatoes into each muffin cup. Press the potato against the bottom and sides, creating a hollow nest space in the center.
  • Fill the hollow space with about 1 tablespoon of the bacon-cheese mixture.
  • Top each nest with a bit more mashed potato to gently cover the filling. Sprinkle the remaining shredded cheese on top.
  • Bake in the preheated oven for 20-25 minutes or until edges turn golden brown and crispy.
  • Let the nests rest for 5 minutes before carefully removing them from the tin to hold their shape better.
