Roasted Carrots with Whipped Ricotta and Hot Honey combines bold flavors to turn simple veggies into a mouthwatering dish youll love

Ingredients

Scale
  • 1 pound carrots, peeled and cut into uniform sticks about 3-4 inches long
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 cup whole-milk ricotta cheese
  • 2 tablespoons whole milk or heavy cream
  • 2 tablespoons honey
  • 1 teaspoon crushed red chili flakes
  • 1 tablespoon fresh lemon juice
  • Fresh herbs for garnish, like thyme or parsley (optional, finely chopped)

Instructions

  • Preheat the oven to 425°F (220°C). While the oven warms up, prepare your carrots.
  • Toss carrots with olive oil, salt, and pepper. Coat evenly to encourage browning and flavor.
  • Spread the carrots in a single layer on a baking sheet giving them some space to roast instead of steam.
  • Roast for about 25-30 minutes, flipping halfway through to get even caramelization. Watch carefully starting at 25 minutes to avoid burning.
  • While carrots roast, whip the ricotta. In a medium bowl, combine ricotta, milk (or cream), lemon juice, and a pinch of salt. Use a hand mixer or whisk vigorously until smooth and light—about 2-3 minutes.
  • Prepare the hot honey by gently warming honey and red chili flakes over low heat for 3-4 minutes. Remove from heat and let cool slightly.
  • Once carrots are roasted, arrange them on a serving platter.
  • Dollop the whipped ricotta over or alongside the carrots.
  • Drizzle the hot honey over the entire dish and sprinkle chopped fresh herbs on top if desired.
