  • 1 cup mayonnaise
  • 1/2 cup buttermilk
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 cup cherry tomatoes, halved
  • 1/2 cup finely chopped red onion
  • 1 cup diced cucumber
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced black olives
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper, to taste
  • Instructions

  • Cook the rotini pasta: Bring a large pot of salted water to a boil. Add the rotini and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop the cooking process and cool it down for the salad.
  • Prepare the ranch dressing base: In a large bowl, whisk together mayonnaise, buttermilk, and the ranch seasoning mix until thick and creamy.
  • Combine pasta with veggies: Toss the cooled pasta with cherry tomatoes, diced cucumber, red onion, cheddar cheese, and black olives.
  • Mix the salad: Pour the ranch dressing over the pasta and vegetables. Stir gently but thoroughly to coat everything evenly.
  • Season and chill: Taste and add salt and black pepper as needed. Cover and refrigerate for at least an hour before serving to allow flavors to blend.
  • Garnish and serve: Right before serving, sprinkle chopped fresh parsley on top for added color and freshness.
