  • 1 medium onion, diced fine
  • 3 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups low-sodium beef or chicken broth
  • 2 teaspoons dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup dry small pasta (like ditalini or elbow macaroni)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup ricotta cheese, plus extra for serving
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  • Heat a large pot over medium heat. Add the ground beef or sausage and cook, breaking it apart with a wooden spoon until browned and cooked through, about 6-8 minutes. Drain excess fat if necessary.
  • Toss in the diced onion and stir for 3-4 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  • Stir in the crushed tomatoes, broth, Italian seasoning, and red pepper flakes if using. Season lightly with salt and pepper. Bring everything to a simmer.
  • Once simmering, add your dry pasta. Stir occasionally to prevent sticking. Cook uncovered for 10-12 minutes or until pasta is tender but still slightly firm.
  • Lower the heat. Stir in ricotta, mozzarella, and Parmesan cheese until melted and fully combined. Taste and adjust salt and pepper as needed.
  • Ladle soup into bowls. Top with extra ricotta dollops and a sprinkle of fresh basil or parsley for a pop of color and fresh flavor.
