  • 1 bell pepper (red or green), diced
  • 1 tablespoon Cajun seasoning (store-bought or homemade blend)
  • 1/2 teaspoon smoked paprika
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne pasta (uncooked)
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup chopped fresh parsley (for garnish)
  • Salt and freshly ground black pepper to taste
  • Instructions

  • Heat the olive oil and butter in a large, deep skillet or Dutch oven over medium heat. Add the sliced smoked sausage and cook until browned and slightly crisp on the edges, about 5-6 minutes.
  • Remove the sausage with a slotted spoon and set it aside. In the same pot, add the onion, bell pepper, and garlic. Sauté until softened and fragrant, roughly 3-4 minutes.
  • Sprinkle the Cajun seasoning and smoked paprika over the veggies and stir well to toast the spices, about 1 minute.
  • Add the uncooked penne pasta to the pot and pour in the chicken broth and heavy cream. Stir well to prevent pasta from sticking.
  • Bring the mixture to a gentle boil, then reduce heat to medium-low. Cover and simmer, stirring occasionally, for about 15 minutes or until pasta is tender and creamy.
  • Stir in the browned sausage and shredded cheddar cheese until the cheese melts smoothly into the sauce, about 2 minutes. Taste and adjust seasoning with salt and pepper.
  • Remove from heat, sprinkle with fresh parsley, and serve straight from the pot.
