  • 1 package (16 oz) potato gnocchi
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 cup chicken broth (low sodium preferred)
  • 1/4 cup grated Parmesan cheese
  • 1 cup fresh spinach, roughly chopped
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  • Heat your skillet: Warm the olive oil over medium-high heat until shimmering but not smoking.
  • Cook the chicken: Add the sliced chicken, season with salt and pepper, and sauté for about 4-5 minutes per side until golden brown and cooked through. Remove from the pan and set aside.
  • Sauté the garlic: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant, stirring constantly so it doesn’t burn.
  • Add lemon zest and juice: Pour in the lemon juice and sprinkle the zest, letting it bubble and mingle with the garlic for about a minute.
  • Cook the gnocchi: Add the gnocchi directly into the skillet along with the chicken broth. Stir gently, ensuring gnocchi are partially submerged. Cover with a lid and let simmer for 5-7 minutes, stirring halfway, until the gnocchi is tender and has absorbed most of the liquid.
  • Finish with chicken and spinach: Return the chicken to the skillet, toss in the chopped spinach, and stir until the spinach wilts, about 2 minutes.
  • Add Parmesan and seasoning: Sprinkle grated Parmesan cheese over everything, stir again, and adjust salt and pepper to taste before serving immediately.
