  • 2 ¾ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons fresh lemon juice
  • Optional: coarse sugar for sprinkling

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until fluffy and slightly pale, about 3 to 4 minutes.
  • Beat in the egg and vanilla extract until fully combined.
  • Sprinkle in the dried lavender buds and lemon zest. Stir gently to distribute evenly.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  • Pour in the lemon juice and fold it in quickly.
  • Using a tablespoon or cookie scoop, drop rounded spoonfuls onto the prepared baking sheets, spacing about 2 inches apart.
  • Optional: sprinkle a little coarse sugar on top.
  • Bake for 10–12 minutes, rotating the pans halfway through, until pale golden at edges but still soft in the middle.
  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
