  • ½ cup cream cheese, softened

  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning or a mix of dried basil, oregano, and thyme
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons butter
  • Optional: ¼ teaspoon red pepper flakes for a mild kick

  • Start by turning your crockpot to low heat.
  • In a saucepan over medium heat, melt the butter. Add the minced garlic and cook for about 1 minute until fragrant—watch it carefully to avoid burning.
  • Add the heavy cream and cream cheese to the saucepan. Stir occasionally until the cream cheese melts completely and the mixture is smooth.
  • Sprinkle in the onion powder, Italian seasoning, salt, pepper, and red pepper flakes if using. Stir to combine and let it simmer for 2 minutes to let the flavors meld.
  • Place the chicken pieces at the bottom of the crockpot in an even layer.
  • Spread the broccoli florets on top of the chicken.
  • Pour the creamy cheese sauce evenly over the chicken and broccoli.
  • Sprinkle the shredded cheddar, mozzarella, and Parmesan cheese evenly across the top.
  • Cover the crockpot with the lid and cook on low for 3 to 4 hours. Check tenderness at 3 hours; the chicken should be cooked through, and broccoli tender but not mushy.
  • Once cooked, switch the crockpot to warm or off and let the casserole rest for 10 minutes before serving. This helps it set slightly for easier serving.
