  • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal later.
  • Cream the butter and sugar. In a large mixing bowl, beat the softened butter and sugar together until the mixture is light and fluffy (about 3 to 5 minutes).
  • Add eggs and vanilla. Beat in the eggs one at a time, mixing well after each addition. Then mix in the vanilla.
  • Combine dry ingredients. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet ingredients, mixing just until combined.
  • Divide and color the dough. Split the dough evenly into six portions. Tint each portion a different color—red, orange, yellow, green, blue, and purple—using gel or paste food coloring.
  • Press the layers. Line your baking pan with these colorful dough blobs side by side, then gently press and smooth them together until the dough is about 1 to 1¼ inches thick.
  • Bake for 25-30 minutes or until the edges turn golden and a toothpick inserted comes out clean.
  • Cool and slice. Let the cookie slab cool completely in the pan (about 45 minutes). Use the parchment paper overhang to lift it out and slice into bars or squares.
