  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet (about 1 ounce) taco seasoning mix or 2 tablespoons homemade taco seasoning
  • 1 cup canned diced tomatoes, drained
  • 1 cup canned black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 cup shredded Mexican blend cheese (sharp cheddar and Monterey Jack)
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup crushed tortilla chips (optional, for topping)
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)
  • Salt and pepper, to taste
  • Non-stick cooking spray or 1 tablespoon olive oil

Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
  • Heat a large skillet over medium heat. Add ground turkey and diced onion. Cook, breaking up the meat with a spatula, until turkey is browned and cooked through, about 6 to 8 minutes.
  • Add the minced garlic during the last minute of cooking to avoid burning it.
  • Sprinkle the taco seasoning over the cooked turkey mixture and stir well for even seasoning.
  • Add the drained diced tomatoes, black beans, and corn. Stir and cook for 2 additional minutes to combine flavors and warm through.
  • In a separate bowl, mix together softened cream cheese and sour cream until smooth.
  • Spread half of the turkey mixture evenly in the greased baking dish.
  • Spread half of the cream cheese mixture over the turkey layer. Repeat layering with the remaining turkey mixture and cream cheese mixture.
  • Sprinkle shredded Mexican blend cheese evenly over the casserole’s top layer.
  • Optionally, crush tortilla chips and scatter evenly over the cheese.
  • Bake uncovered in the preheated oven for 20 to 25 minutes, until cheese melts, bubbles, and lightly browns.
  • Remove from oven and let cool 5 minutes before serving.
