  • 4 cups peeled and chopped russet potatoes
  • 1 cup chopped yellow onion
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/4 cup whole milk
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley, chopped (optional for garnish)

  • Preheat your oven to 400°F (200°C) to ensure it’s hot enough to crisp the mashed potato topping perfectly.
  • Place chopped russet potatoes in a pot of salted water. Boil for 15-20 minutes until tender when pierced with a fork. Drain well and set aside.
  • In a large skillet, heat olive oil over medium heat. Add chopped onions and diced carrots, cooking until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute.
  • Add ground turkey to the skillet. Cook, breaking it up with a spoon, until no longer pink, about 6-8 minutes. Stir in tomato paste, Worcestershire sauce, dried thyme, salt, and pepper. Pour in chicken broth and simmer until slightly thickened, around 5 minutes. Stir in frozen peas and remove from heat.
  • Combine cooked potatoes with unsalted butter and whole milk. Mash until creamy but still slightly textured. Season with salt and pepper to taste.
  • Spread the turkey mixture evenly in a baking dish. Dollop and smooth the mashed potatoes over the top, covering the filling completely. Optionally, run a fork over the top to create ridges that brown nicely in the oven.
  • Bake for 25-30 minutes until the edges bubble and the topping develops a golden crust.
  • Let the pie rest for 5-10 minutes before serving to allow everything to settle for easier portioning.
