  • ½ cup grated Parmesan cheese
  • 2 tablespoons mayonnaise (optional)

  • Instructions

  • Preheat your oven to 425°F (220°C).
  • Prepare the cauliflower by removing leaves and trimming the stem, keeping the core intact. Slice into ¾-inch thick steaks. Press separated florets back gently.
  • In a small bowl, combine 1 tablespoon olive oil, garlic powder, smoked paprika, salt, and pepper. Brush this mixture on both sides of each cauliflower steak.
  • Arrange steaks on a baking sheet lined with parchment paper. Roast for 20 minutes, flipping halfway through.
  • Mix shredded cheddar, Parmesan, and mayonnaise in a bowl.
  • Remove cauliflower steaks from the oven after 20 minutes. Spread the cheese mixture evenly on top of each steak.
  • Return to the oven and roast for another 10-15 minutes until the cheese is bubbling, golden, and crusty.
