Savor the rich flavors of French Onion Chicken Orzo Casserole a comforting meal ready in 30 minutes to warm your soul

Ingredients

Scale
  • 2 cups thinly sliced yellow onions
  • 3 tablespoons unsalted butter, divided
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 1/2 cups orzo pasta
  • 4 cups low-sodium chicken broth
  • 1 cup shredded Gruyère cheese
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme

Instructions

  • Heat 2 tablespoons of unsalted butter in a large skillet over medium-low heat. Add the thinly sliced yellow onions and caramelize slowly for about 30-40 minutes, stirring occasionally, until deep golden brown and sweet.
  • In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the cut chicken breasts, season with salt, pepper, and dried thyme, and brown evenly for 5-7 minutes until cooked through. Remove from heat.
  • Preheat the oven to 375°F (190°C). In a casserole dish, combine the caramelized onions, browned chicken, orzo pasta, and low-sodium chicken broth. Stir gently to combine and ensure the orzo is submerged.
  • Cover the casserole tightly with foil and bake for 35 minutes. Check for doneness by ensuring the orzo is tender and has absorbed most broth.
  • Remove the foil, sprinkle shredded Gruyère cheese evenly over the top, and bake uncovered for an additional 10-15 minutes until cheese is melted and golden brown.
  • Let the casserole rest for 5 minutes before serving to allow flavors to meld and the dish to set.
