  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt

  • 8-10 fresh figs, sliced
  • 1/3 cup honey (preferably a floral variety like acacia or wildflower)
  • 1/3 cup shelled pistachios, roughly chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)
  • Instructions

  • Combine the flour, powdered sugar, and salt in a large bowl. Add the chilled butter cubes and use your fingertips or a pastry cutter to rub the butter into the flour until the mixture looks like coarse crumbs with some pea-sized bits.
  • Drizzle cold water a little at a time, starting with 1 tablespoon, mixing gently just until the dough comes together. Stop as soon as the dough holds when pressed.
  • Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes to firm up the butter and relax the gluten.
  • Preheat oven to 375°F (190°C). Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan. Place in the pan, trim edges, prick base with a fork. Line the crust with parchment and fill with pie weights or dried beans. Blind bake for 15 minutes.
  • Remove weights and parchment, brush the crust with beaten egg, and return to oven for another 10 minutes until golden.
  • Mix honey, lemon juice, and vanilla in a small bowl. Arrange sliced figs on the baked crust and drizzle the honey mixture on top.
  • Scatter chopped pistachios evenly over the figs.
  • Bake for another 15-20 minutes until figs are soft but hold shape and pistachios are lightly toasted.
  • Let the tart rest for at least 10 minutes before slicing to let flavors settle and the tart firm up.
