  • 1 cup salsa (chunky style)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 small can (4 oz) diced green chilies
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • Juice of 1 lime
  • Instructions

  • Preheat the oven to 375°F (190°C).
  • Pat chicken breasts dry with paper towels, then rub each piece with olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper.
  • In a large skillet over medium-high heat, sear the chicken breasts for about 2 minutes per side until golden crust forms.
  • Mix together the salsa, sour cream, diced green chilies, and half of the chopped cilantro to form the creamy sauce.
  • Place the seared chicken breasts in a baking dish and pour the salsa and sour cream mixture evenly over the top.
  • Sprinkle shredded cheddar and Monterey Jack cheeses evenly over the chicken.
  • Bake uncovered for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  • Remove from oven and squeeze fresh lime juice over the top. Garnish with the remaining cilantro.
  • Serve immediately with sides like rice, tortillas, or a fresh green salad.
