  • 4 bone-in, skin-on chicken thighs (about 6-7 ounces each)
  • 1/4 cup low-sodium soy sauce
  • 4 garlic cloves, minced
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger (optional)
  • 2 tablespoons vegetable oil
  • Freshly ground black pepper to taste
  • Chopped green onions for garnish (optional)

  • Combine soy sauce, minced garlic, honey, rice vinegar, and grated ginger in a bowl. Add the chicken thighs and turn them to coat well. Cover and let marinate in the fridge for at least 30 minutes, preferably an hour.
  • Heat vegetable oil in a large skillet over medium-high heat until hot but not smoking.
  • Place chicken thighs skin-side down in the skillet. Cook without moving for 6-8 minutes until the skin is crispy and golden.
  • Flip the chicken and cook the other side for 6-7 minutes until internal temperature reaches 165°F (75°C) and juices run clear.
  • Pour leftover marinade from the bowl around the chicken in the pan. Let simmer for 2-3 minutes while occasionally basting the chicken. The sauce will reduce and glaze the thighs.
  • Turn off the heat and let the chicken rest in the pan for a few minutes before serving.
