  • 1 cup canned coconut milk (full fat for creaminess)
  • 0.5 cup chicken broth
  • 1 tablespoon tomato paste
  • 1 tablespoon grated fresh ginger
  • 1 cup chopped carrots
  • 1 red bell pepper, chopped
  • 1 teaspoon salt (start with)
  • 2 tablespoons vegetable oil or ghee
  • Fresh cilantro for garnish (optional)

  • Heat oil or ghee in a skillet over medium-high heat. Brown chicken pieces for 3-4 minutes until lightly golden; this locks in flavor. Transfer chicken to your crockpot.
  • In the same skillet, add diced onions, garlic, and ginger. Sauté for 2-3 minutes until fragrant and softened. Then stir in curry powder, turmeric, cumin, and chili powder. Cook the spices for 1 minute to release their aroma.
  • Scrape the spiced onion mixture into the crockpot over the chicken. Add tomato paste, chopped carrots, and red bell pepper.
  • Pour the coconut milk and chicken broth into the crockpot. Stir lightly to combine but don’t overmix; the coconut milk should swirl in.
  • Season with salt. Cover the crockpot and cook on low for 5-6 hours or on high for 3-4 hours until chicken is tender and flavors melded.
