Ingredients

Scale
  • 1 pound ground turkey (lean, but not too dry)
  • 2 cups fresh spinach, chopped finely
  • 1/2 cup plain breadcrumbs (preferably fresh or panko for light texture)
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs (or a mix of oregano and basil)
  • 1 tablespoon olive oil (for browning the meatballs)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup cream cheese, softened
  • Fresh parsley (optional, for garnish)

Instructions

  • Preheat your oven to 375°F (190°C). While it heats up, line a baking sheet with parchment paper or lightly grease it.
  • In a large bowl, combine the ground turkey, chopped spinach, breadcrumbs, Parmesan, eggs, minced garlic, diced onion, salt, pepper, and Italian herbs. Mix gently until just combined, avoiding overmixing.
  • Shape the mixture into meatballs about 1.5 inches in diameter, ensuring uniform size.
  • Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides for about 5 minutes without fully cooking them.
  • Transfer the browned meatballs to the prepared baking sheet. Bake for 15–20 minutes until cooked through to an internal temperature of 165°F (74°C).
  • In the same skillet, reduce heat to low and add chicken broth. Scrape the pan to loosen browned bits.
  • Stir in heavy cream and softened cream cheese until smooth. Simmer gently for 5 minutes, stirring occasionally.
  • Add the baked meatballs back into the skillet, coating them with the creamy spinach sauce. Cook together for another 2 minutes.
  • Garnish with fresh parsley before serving.
