Ingredients

Scale
  • 12 oz bowtie (farfalle) pasta
  • 1 lb ground beef (80/20 for that perfect fat balance)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Instructions

  • Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions, about 10-12 minutes, until al dente. Drain and set aside.
  • In a large skillet over medium heat, warm the olive oil and butter until melted and shimmering.
  • Add the chopped onion and sauté for about 4 minutes until soft and translucent. Then, toss in the minced garlic and cook for another 30 seconds until fragrant. Be careful not to burn the garlic.
  • Add the ground beef, breaking it up with a spatula. Cook for 6-8 minutes until fully browned. Season with salt, black pepper, and dried Italian seasoning as it cooks.
  • Pour in the beef broth. Scrape the bottom of the pan to lift all those caramelized bits. Let it simmer for 3 minutes to reduce slightly.
  • Lower the heat and stir in the heavy cream, letting the mixture come to a gentle simmer. Don’t boil; simmer for 4-5 minutes until slightly thickened.
  • Remove the skillet from heat and mix in the Parmesan cheese. Stir until sauce thickens and becomes glossy; add more salt and pepper if needed.
  • Toss the cooked bowtie pasta into the skillet, gently coating each piece with the sauce. Stir to combine.
  • Garnish with freshly chopped parsley before serving.
