  • 1 ripe avocado, mashed
  • 4 slices of whole-grain or sourdough bread
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lime juice
  • 1 garlic clove, minced
  • 1 small red onion, thinly sliced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Butter for spreading on bread
  • Optional: fresh cilantro or parsley for garnish
  • Instructions

  • Prep your chicken and avocado mix: In a bowl, mash the avocado with lime juice, salt, pepper, and minced garlic until smooth but still slightly chunky. Fold in the shredded chicken evenly.
  • Assemble the sandwich: Spread mayonnaise evenly over each slice of bread. Spoon the chicken-avocado mixture on two slices, then layer thin slices of red onion on top. Sprinkle shredded cheddar cheese generously on top of the mix.
  • Top and butter bread: Place the remaining two bread slices on top. Spread butter on the outside of each sandwich slice.
  • Cook the sandwiches: Heat a skillet over medium heat. Place the sandwiches in the pan and cook for about 3-4 minutes on each side until the bread is golden brown and the cheese is melted. Press gently with a spatula to help everything meld and melt together.
