  • ¼ cup granulated sugar
  • 16 ounces cream cheese, softened (room temperature is key)
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 large apples, peeled, cored, and diced into small cubes
  • 1 cup caramel sauce (store-bought or homemade, but thick and pourable)
  • 1 teaspoon ground cinnamon
  • Optional: pinch of nutmeg for extra warmth in the apple mixture

Instructions

  • Preheat your oven to 325°F (165°C). Line a 9×9 inch baking pan with parchment paper, leaving some overhang for easy removal later.
  • Mix graham cracker crumbs, melted butter, and ¼ cup granulated sugar in a bowl until it feels like wet sand. Press this mixture firmly and evenly into the bottom of the pan. Bake the crust for 8-10 minutes until it starts to set. Allow it to cool slightly while you prep the filling.
  • Beat the softened cream cheese with ½ cup sugar until smooth and creamy. Add the egg and vanilla extract, mixing gently until just combined.
  • In a separate bowl, toss diced apples with cinnamon (and nutmeg if using). Make sure every piece is coated.
  • Spread half the cream cheese mixture over the crust evenly. Scatter half the spiced apples on top of that, then drizzle a few spoonfuls of caramel sauce over the apples. Repeat with the remaining cream cheese layer, apples, and caramel.
  • Bake the bars for 35-40 minutes. The cheesecake layer should be mostly set but still jiggle a little in the center. Don’t overbake.
  • Let the bars cool on the counter for about an hour, then transfer to the fridge to chill for at least 3 hours, or overnight for the best sliceability.
  • Slice with a warm, clean knife for neat edges.
