1½ cups graham cracker crumbs (finely crushed for a smooth crust)
⅓ cup unsalted butter, melted
¼ cup granulated sugar
16 ounces cream cheese, softened (room temperature is key)
½ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 large apples, peeled, cored, and diced into small cubes
1 cup caramel sauce (store-bought or homemade, but thick and pourable)
1 teaspoon ground cinnamon
Optional: pinch of nutmeg for extra warmth in the apple mixture
Instructions
Preheat your oven to 325°F (165°C). Line a 9×9 inch baking pan with parchment paper, leaving some overhang for easy removal later.
Mix graham cracker crumbs, melted butter, and ¼ cup granulated sugar in a bowl until it feels like wet sand. Press this mixture firmly and evenly into the bottom of the pan. Bake the crust for 8-10 minutes until it starts to set. Allow it to cool slightly while you prep the filling.
Beat the softened cream cheese with ½ cup sugar until smooth and creamy. Add the egg and vanilla extract, mixing gently until just combined.
In a separate bowl, toss diced apples with cinnamon (and nutmeg if using). Make sure every piece is coated.
Spread half the cream cheese mixture over the crust evenly. Scatter half the spiced apples on top of that, then drizzle a few spoonfuls of caramel sauce over the apples. Repeat with the remaining cream cheese layer, apples, and caramel.
Bake the bars for 35-40 minutes. The cheesecake layer should be mostly set but still jiggle a little in the center. Don’t overbake.
Let the bars cool on the counter for about an hour, then transfer to the fridge to chill for at least 3 hours, or overnight for the best sliceability.
