  • 4 slices sourdough bread (thick-cut preferred)
  • 6 oz Brie cheese, sliced thinly
  • 1 cup fresh blackberries
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 3 tbsp unsalted butter, softened (for spreading)
  • Fresh thyme leaves (optional, for garnish)
  • Pinch of salt
  • Instructions

  • In a small saucepan, combine the blackberries, balsamic vinegar, honey, and a pinch of salt. Simmer over medium-low heat, stirring occasionally, until the berries break down and the mixture thickens slightly—about 10 minutes. It will look jammy and coat the back of a spoon. Set aside to cool.
  • Butter one side of each slice of sourdough bread generously. On the unbuttered side of two slices, layer even slices of Brie cheese, then spoon over a good amount of the blackberry balsamic glaze. Top with the remaining sourdough slices, buttered side out.
  • Heat a large skillet over medium heat. Place the sandwiches in the hot pan and cook until the bread is golden brown and crispy, about 4-5 minutes per side. Press down lightly with a spatula to encourage even melting, but be careful not to squish the sandwich too much.
  • Once the Brie is melted and the bread is beautifully toasted, transfer the sandwiches to a cutting board. Slice diagonally, garnish with fresh thyme leaves if using, and serve while warm.
