  • 1 tablespoon apple cider vinegar or rice vinegar

  • Pat the chicken thighs dry with paper towels to get a nice sear when cooking. Season both sides evenly with salt and pepper.
  • In a small bowl, whisk together honey, minced garlic, soy sauce, red pepper flakes, and apple cider vinegar. Set aside while you heat the pan.
  • Heat a large skillet over medium-high heat and add the oil. When hot, add the chicken thighs. Don’t crowd the pan; cook in batches if needed. Let them cook undisturbed for 6–7 minutes on the first side until golden brown and crispy around the edges.
  • Turn the chicken over, then immediately pour your sauce mixture over the chicken. Reduce heat to medium-low so the sauce can thicken without burning.
  • Let the chicken simmer in the sauce for about 5–6 minutes, spooning the thickening sauce over the top. The sauce should turn sticky and coat the chicken beautifully.
