  • 3 green onions, thinly sliced (white and green parts separated)
  • Instructions

  • Toss bite-sized chicken pieces with cornstarch in a large bowl, coating each piece lightly and evenly to achieve a crisp texture when fried.
  • Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat until shimmering. Fry chicken in a single layer without crowding, in batches if needed, about 4-5 minutes per side until golden and cooked through. Remove chicken and drain on paper towels.
  • Add the remaining 1 tablespoon of oil to the same pan. Add minced garlic and grated ginger, stirring continuously for about 30 seconds until fragrant.
  • Pour in soy sauce, water, and brown sugar. Stir to combine and simmer gently for 3-4 minutes, stirring often to prevent scorching, until sauce thickens slightly.
  • Return fried chicken to the pan. Toss thoroughly to coat and simmer with sauce for 2-3 minutes, allowing chicken to absorb flavors.
  • Add white parts of green onions, stir gently, then remove pan from heat. Sprinkle green parts of onions on top for color and fresh flavor.
